Description
It is a sodium salt of citric acid, is sometimes used as an emulsifier for oils when making cheese.
Function
Is a sodium salt of citric acid and sometimes termed sour salt due to it's mildly tarty flavor is commonly used as an acidity buffer or regulator and as an anticoagulant. As an anticoagulant, the Sodium Citrate chelates calcium ions in the blood that in turn disrupts the clotting process.
