Function
Is a sodium salt of lactic acid. It functions as a buffering agent, exfoliant, skin conditioning agent and humectant. In meat, poultry and seafood products, sodium lactate is used to improve microbial stability, enhance flavor, increase shelf-life and reduce moisture loss. Sodium lactate is also used to treat arrhythmias caused by overdosing of class I antiarrythmics, as well as pressor sympathomimetics which can cause hypertension.
