Description
One of its many characteristics is that it's a deliquescent alkali and absorbs carbon dioxide and moisture from the air. Food grade sodium hydroxide is used in the chemical washing and peeling of fruits and vegetables, softening of firm substances and as a thickening agent.
Function
The dissolution of solid sodium hydroxide in water creates a highly exothermic reaction (creates a lot of heat). One of its many characteristics is that it's a deliquescent alkali and absorbs carbon dioxide and moisture from the air. Used in many industries, most notably in the manufacture of pulp, paper, textiles, drinking water, detergents and as a pharmaceutical excipient.

Storage
Store in a tightly closed container. Store in a cool, dry, well-ventilated area away from incompatible substances. Keep away from metals.
